Aromas of cherry, vanilla, dried berries, dried herbs, strawberries and cinnamon. Flavors of cocoa, herbal tea, and hibiscus. Age for 5 - 8 years.
Before fermentation we bled off 20% of the juice from these grapes to produce a rose, thus concentrating the remaining juice for this wine. We also retained 20% whole clusters for the fermentation, adding additional tannic structure to the wine.
Pairs well with pizza and other dishes with cooked tomatoes such as lasagna or cacciatore. Herb crusted salmon with a cream sauce would also pair nicely.
