Aged in 100% New French Oak, Medium Toast. We did a three-day cold soak to increase color and flavor extraction prior to fermentation and a 20% whole cluster fermentation to increase tannic structure.
This wine boasts a rich, inky garnet hue typical of Charbono. Aromatically, it’s full of dark fruit and earth notes; pomegranate and plum, tart cherry and earthy blackberry. Firm, integrated tannins and significant structure in the mid-palate give it enough body to age for another 5 – 8 years.
Charbono is a Mediterranean grape from the hills of Savoie, a region that has changed hands between Italy and France over the years, and is currently under French rule. It has long been an obscure grape and an underdog in the winemaking scene. Fleshy, with more seeds than most varieties, it’s not exactly most winemakers’ dream grape. We’ve come to love its propensity for excellent mid-palate structure and it’s intense, earthy depth.
