Aged for 20 months in 100% New French Oak.
Before fermentation we bled off 20% of the juice from these grapes to produce a rose, thus concentrating the remaining juice for this wine. We also retained 20% whole clusters for the fermentation, adding additional tannic structure to the wine.
The aromas of this wine evoke a classic Sangiovese, leathery and earthy with cinnamon, clove, and dried herb notes. Spicy tannins and a tart cherry palate are indicators that this wine is an ager, being built to cellar for 10 years or more, or paired with rich food dishes.
Sangiovese traditionally can stand up to the acid in tomatoes, and therefore we can see this wine paired with a rich chicken and tomato dish, margherita pizza, or hearty tomato-based soup.
