We bled 30% of the juice from these grapes off the top to produce a Barbera Rosé. We added roughly 10% Petite Sirah skins by volume for additional color extraction. We aged this wine in 100% New American Oak.
This Barbera is a dusty garnet color. It has distinct cherry-vanilla clafouti aromas, with hints of blackberry and sandalwood. Classically tart on the palate with a flavor of chewable vitamin C, balanced by a subtle touch of sweetness rounding out the mid palate, with lingering flavors of black raspberry and blackberries.
Barbera pairs nicely with herbaceous Northern Italian cheeses or blue cheeses. It can also pair nicely with higher tannin vegetarian foods like root vegetables and braised greens. Also try it with cooked mushrooms and rich, dark meats, and rich pasta dishes. Barbera is traditionally an approachable wine, and therefore not one you should fuss over pairing, just enjoy it!
