The Cabernet Sauvignon grown on the Mediterranean Vineyards estate is an Italian clone certified by UC Davis. We aged this wine for 18 months in 100% new oak, 50% of which was French Oak, and 50% was American Oak.
Our first vintage of Cabernet is a beautiful purple garnet color and features hints of vanilla spice, wet forest, earth and a bounty of dark berry fruits on the nose. We picked up aromas of dried cherry, blueberry, and blackberry. We find it medium-bodied and robust on the palate, with a relatively velvety finish for its youth. Age for up to 5 to 7 years.
Paired at release with Slow Roasted Brisket, Wine and Shallot Au Jus, and Blue Cheese. Other food pairing ideas include Beef & Barley Stew, short ribs, steak, meatballs, and portobella mushrooms.
