100% Petite Sirah
Aged in 100% New French Oak for 22 months.
While many wineries opt to bleed off some Petite Sirah juice to produce an even more tannic and extracted wine, we did not bleed off any juice, in order to produce a wine with a less chewy tannic structure that is more approachable as a younger wine.
Deep and inky in color and bursting with jammy fruit. Expect aromas of blackberry jam, brambles, and black pepper along with notes of vanilla from oak aging. On the palate, rich and bold tannins compliment the sweet berry-like flavors and smooth acidity.
Chicken Molé, blue cheese, aged gouda, and various types of burgers including the traditional beef or lamb, but even mushroom or spiced black bean burgers can pair well with this wine.
