We hand-sorted and cofermented the Tempranillo and Zinfandel in this blend, punching down three times per day during fermentation to promote extraction.
Spicy black pepper aromas mingle with plum and currant notes as this wine opens up and delivers fresh tobacco and hints of leather. Did someone say cowboy?
Spice continues on the front of the palate, leading to a round and fruit-forward mid-palate with red fruit flavors. This rich wine has a medium-length finish and structure to age for another 5 years or so in bottle.
This wine begs for grilled meats! A grilled steak would be a great choice. We’d also love this with a burger with gorgonzola or caramelized onions. An English cheddar with caramelized onions is a good cheese pairing, or serve it with an appetizer of bacon-wrapped dates.
