We let these grapes hang on the vine for longer to increase sugars and get the traditional partial raisining of the grapes. We harvested just before Halloween, 2018. After 10 days in tank we halted fermentation with some natural sugars remaining, and we sealed the tank. The sealed tank allowed for an extended maceration that created more tannic structure and color extraction, and we pressed the tank in January.
We aged this wine in 50% new American and 50% New French Oak for 12 months, then transferred to new barrels for another 6 months.
Our third vintage of our most popular wine does not disappoint. This Amarone-inspired Zinfandel boasts aromas of black pepper, cinnamon, chocolate, tobacco, and raisins. Silky smooth on the palate, punctuated by enough acidity and tannin to balance the subtle sweetness of this style of wine. Flavors of raisin, spice, and graham crackers, with a lingering finish.
Food Pairing Ideas
Grilled meats, especially with a slightly sweet barbecue sauce, will pair nicely with this wine. We also love to make our own cherry-Zinfandel barbecue sauce using this wine. Rustic meat stews and strong cheeses are classic Italian pairings for this style.
