Tasting Notes
Our first bottling of this Port style sweet wine is deeply garnet in color and full-bodied. It boasts a profile of dark, dried cherry and briar fruit perfectly balanced with hints of caramel, cinnamon, tart cranberry, and light floral notes. You’ll taste flavors of dried plum and enjoy a silky mouthfeel with pleasing acidity and a medium finish.
Winemaking Notes
We fermented the components of this wine until they were down to about 8 brix of remaining natural sugar, then stopped fermentation by fortifying with neutral spirit, followed by a two-month extended maceration on the skins before pressing. The extended maceration helped smooth out the wine’s structure and quell some of the alcohol bite. The wine then underwent extended aging in neutral barrels. The base of this wine is from the 2018 vintage, fractionally blended with portions of port style wines from previous vintages that we have still aging in barrel.
Food Pairing
This Port-style wine is the perfect accompaniment to any dessert table! We strongly recommend you pair this wine with a dark chocolate mousse with orange zest. This pairing truly allows the wine to soar! Chocolate cake, truffles, gingerbread, cheesecake, and candied nuts are also great choices for sweet pairings. For savory pairings we suggest blue cheese, either on a cheese plate or as a dip possibly with some bacon and toasted, salted nuts included.
Aging
Aged in neutral oak barrels for a minimum of 36 months.

A blend of Touriga Nacional, Souzão, Tinta Cão, with a little bit of Zinfandel and Petite Sirah
40 cases bottled in 375 ml bottles
