Tasting Notes
Our first release of this Sherry style wine is gorgeously golden orange in color. You’ll find nutty, toasty aromatics with hints of orange marmalade, apple sauce, vanilla, and Chrysanthemum. It is smooth with sweetness balanced by mouthwatering acid, flavors of citrus zest and a long, lingering marmalade finish.
Winemaking Notes
For the base of this Sherry style wine, we fermented a blend of Chardonnay, Sauvignon Blanc and Muscat and arrested the fermentation part way through with a high proof spirit, retaining a fair amount of the natural sugars from the grapes. We put that fortified wine into oak barrels and aged them in the sun for three years. During aging we did not top off the barrels as the wine slowly evaporated, allowing for a larger head space to oxidize and create the nutty character we were looking for.
We started our Sherry program in 2015 and continue to add new barrels to the program each year, creating our own take on the traditional Solera system used to produce Sherry in Southern Spain. This wine is a blend of vintages going back to those first barrels in 2015, allowing for a balance of characteristics from both the younger and older wines that are aging in the program.

Flan. Apple Pie, Pear or Quince Tart with vanilla ice cream. Seasonal fruit crumbles. Biscotti.
Aging
Aged in neutral barrels for as long as six years.
