Stone Fruit Summer Salsa

There's nothing like perfectly ripe peaches or nectarines in the summer. This easy recipe pairs perfectly with relaxed summer dinners and our 2020 Pinot Grigio.
- 2 lbs Stone fruit, diced (pick your favorite stone fruit or what looks best at your local market)
- 1 small red onion, diced
- 1 jalapeño, seeded (if you don't like heat) and diced
- 2 tbsps cilantro, diced
- 1 to 2 limes, juiced
- salt to taste
Wash and dice fruit, onion, jalapeño and cilantro. Juice limes. Mix first four ingredients together in a bowl and season with lime juice and salt to taste. Cover and refrigerate for at least one hour to allow flavors to develop. Serve atop fresh grilled seafood as part of a main course, or with your favorite corn chips.
